Tomato Avocado Salad
Ingredients
(makes 4 servings)
- 2 Avocados
- ~400gr. Tomatoes
- 1 onion/ spring onion
- 8 spoons of olive oil
- 12 spoons of balsamic
- 4 spoons of honey
- Garlic clove
- Salt and pepper
Method
- Cut avocados and tomatoes into bite-sized cubes and chop onion and garlic into tiny pieces.
- Mix olive oil, balsamic and honey, add some salt and pepper. Pour this over the salad and let it sit for a few minutes.
- Can be eaten as a salad or spread on baguette/ciabatta. Should you decide for the latter, try roasting the bread pieces first for it to stay crispy. When roasting, you may add some garlic.
This makes a perfect starter or side dish for a nice summer evening dinner.
