Tomato Avocado Salad


Ingredients (makes 4 servings)
  • 2 Avocados
  • ~400gr. Tomatoes
  • 1 onion/ spring onion
  • 8 spoons of olive oil
  • 12 spoons of balsamic
  • 4 spoons of honey
  • Garlic clove
  • Salt and pepper
Method
  1. Cut avocados and tomatoes into bite-sized cubes and chop onion and garlic into tiny pieces.
  2. Mix olive oil, balsamic and honey, add some salt and pepper. Pour this over the salad and let it sit for a few minutes.
  3. Can be eaten as a salad or spread on baguette/ciabatta. Should you decide for the latter, try roasting the bread pieces first for it to stay crispy. When roasting, you may add some garlic.

This makes a perfect starter or side dish for a nice summer evening dinner.
