TRADITOM Consumer preference testing

From 19th-20th July, TRADITOM carried out consumer preference testing at the Sensory Analysis Lab of the Barcelona School of Agricultural Engineering (ESAB-UPC).

One hundred and thirty-eight participants evaluated a selection of TRADITOM’s traditional tomato collection for different sensory attributes (colour, taste, aroma, and texture). This data will be integrated with data obtained in similar tests carried out in France and Italy to draw a general analysis with regard to European consumers’ opinion about tomato landraces. These results will also be combined with other scientific analyses (such as physiochemical measurement and metabolite composition), to identify varieties with the best characteristics.

Consumer preference testing is crucial for TRADITOM:  the project seeks to identify traditional cultivars and develop new varieties, which have enhanced qualities (agronomic, nutritional and sensory). Sensory preference is paramount for acceptance of the improved cultivars by consumer once they reach the market.
